Żubrówka is distilled at Polmos Białystok in northeastern Poland, the corner of the country where European bison still roam the ancient Białowieża Forest. The bison grass that gives the flagship its character is hand-gathered from those protected meadows, then dried before it ever reaches a bottle.
The recipe traces back to the 15th century, and the craft behind it has barely changed since. What lands in the glass today is the same wild, herbal spirit Poland has poured for centuries.
